I love strawberry season and this year, I just can’t get enough of them! They’re very low in sugar content, full of antioxidants, minerals and fiber – all the good stuff – and soooo good. And they’re also on the low FODMAP list of foods, perfect for those with IBS… like me. I’ve been experimenting a lot with strawberries and here is one of my favorite smoothies made with this delicious little red berry!
For the strawberries and cream smoothie
125g strawberries
1 tablespoon goji berries, soaked
a handful of cashews, soaked
1 tablespoon baobab powder
1 tablespoon linen seeds
a pinch of vanilla bean powder
about 100ml coconut milk
Soak the cashews and goji berries for about 15 minutes. Then blend all the ingredients together, transfer to a bowl and top with fresh strawberries, coconut chips, chia seeds or any other favorite toppings.
This smoothie was a part of a yummy Sunday brunch with avocado, pumpkin-lentil patties, fava bean & mint spread and soft boiled eggs. A perfect protein-rich post-workout meal!
