Layered chocolate-almond butter smoothie & vanilla-blueberry chia pudding

ImageAs much as I love to travel, eating healthy is not always the easiest task and I really crave healthy and clean food when I return home. I’m currently making a two-day stopover at home in Paris before continuing with the last part of my summer break and I’ve been dreaming about a chocolate-almond butter smoothie since I had the best ever chocolate smoothie bowl at BLENDER Juice Bar during my last trip to Quebec City (which is by the way so beautiful!). Canada is actually a fantastic country for health food lovers – healthy snacks and places to eat are available everywhere, even in small towns far off the beaten path :-).

This breakfast delight is also perfect when returning back home from a trip and realizing that you have nothing in the fridge! I brought a banana and some blueberries with me that I bought at the airport (thank goodness for Marks & Spencers food shops at the exit of Paris airport terminals!) and the rest are simply ingredients that I always have at home. I hope you enjoy this very simple and yummy recipe!

For the chocolate-almond butter smoothie
1 banana for the smoothie and 1 extra banana for additional layering/topping
1 teaspoon raw cocoa powder
1 teaspoon maple syrup or any other natural sweetener
1 tablespoon maca powder
1 tablespoon almond butter
1 tablespoon buckwheat groats, soaked for about 15 minutes
1 generous pinch vanilla bean powder
about 100 ml rice milk or any other plant milk

Simply put all the ingredients in a blender and blend until smooth.

For the blueberry-vanilla chia pudding
2 tablespoons chia seeds
1 teaspoonΒ maple syrup or any other natural sweetener
1 generous pinch vanilla bean powder
about 2 tablespoons of blueberries, fresh or frozen
about 100 ml rice milk or any other plant milk

Mix all the ingredients together and place in the refrigerator for about 15 minutes, until the chia seeds gelify. You can also heat up the blueberries previously, especially if you’re using frozen ones, with a bit of natural sweetener and make a compote before swirling it into the vanilla chia pudding. Adjust the consistency of the pudding with the rice milk to get the desired one.

To assemble the breakfast jar, just layer the chocolate smoothie, the sliced banana and the blueberry-vanilla chia pudding. Top it all with additional fruit, a dollop of almond butter and some hemp seeds for an added protein kick :-). There’s no better way to start off the day!
