Orange blossom, pistachio & apricot granola


Wow, this smell… orange blossom and honey diffusing from the oven is just incredible! I’m a big granola fan and it took me a while to get this combination right but I finally did. And I love it! It’s extra chunky thanks to the addition of chickpea flour and it goes really well with fruity smoothies, especially those with tropical fruits. By the time it cooled down and I transferred it into a glass container, half of it already disappeared 😉

For the granola
85 g gluten-free oats
85 g buckwheat groats
60 g coconut flakes
50 g linen seeds
50 g hemp seeds
50 g pumpkin seeds
70 g almonds
60 g pistachios
80 ml freshly squeezed orange juice
80 ml honey, ideally orange blossom honey
1 teaspoon grated orange peel
1 pinch of vanilla bean powder
1 pinch of salt
1 tablespoon orange blossom extract
1 tablespoon chickpea flour
60 g dried apricots, chopped

Mix all the dry ingredients together in a bowl, except the pistachios and coconut flakes. In a smaller bowl, combine the orange juice, honey, grated orange peel, vanilla bean powder, salt, orange blossom extract, chickpea flour and mix well. Pour the wet mixture over the dry ingredients and mix well. Spread the mixture on a baking sheet lined with baking paper and bake at 160ºC for about 45 min, stirring the granola every 15 minutes to bake it evenly. After 30 minutes of baking, add the pistachios and coconut flakes to the granola mixture and bake for the last 15 minutes. Take the granola out of the oven, let cool and finally add the chopped dried apricots. Enjoy :-)!
