Orange-vanilla overnight oats

In my search for foods that won’t aggravate my tummy problems, I read a lot about soaking nuts and grains. This improves the absorption and metabolism of the nutrients that they contain and makes them easier to digest. So I gave overnight oats a try. You soak the oats in water, plant or dairy milk or even fruit juice over night and then style then up which ever way you prefer with additional milk or yogurt, chia pudding, granola, fresh fruits, jams, compotes or nut butter. I chose to use fresh orange juice with a touch of vanilla powder for overnight soaking and the result was really delicious.

For 1 serving of orange-vanilla overnight oats
3 tablespoons of oats (I use gluten-free oats)
juice from 1 orange
1 pinch of vanilla bean powder
1 teaspoon of hemp seeds
1 teaspoon of maca powder
3 tablespoons of coconut milk
Home-made granola, chia seeds, goji berries and fresh fruit as toppings

In the evening, place the oats in bowl, add the vanilla bean powder and the freshly squeezed orange juice. Cover the bowl and leave over night. In the morning, add the coconut milk to the oat mixture and warm it up over low heat. Add the hemps seeds and maca powder. Top with chia seeds, home-made granola and goji berries and enjoy! Add fresh fruit for an additional vitamin boost – it’s really delicious with passion fruit and raspberries  🙂
